Nature’s Table – Stories of Food in Nature – Online

October 13, 20, 27 & Nov 3, 10, 17, 2021

Nature’s Table is a collaborative online learning program that will explore the guiding principles and practices for developing unique culinary experiences in nature.  Participants will engage with one another in a peer to peer sharing process to evaluate and provide feedback on concepts as we build out your culinary offering for 2021/2022.  The program will be using a unique approach in online learning with collaborative and interactive experiences each week that will be the main jumping off point for each session’s discussions. 

Learning Objective:

Provide an interactive learning experience that will help guide participants towards development of successful non-traditional and in nature culinary experiences.

Learning Outcomes:

  • Understand how to craft and establish your guiding principles
  • How to develop your story
  • Experience development formula
  • Key to successful food experiences in nature – foraging and plant identification
  • Understanding your market
  • How to effectively share your story to your ideal guest

Program Overview 

The program will consist of six online learning sessions combined with offline learner discussions using Slack.  All sessions will be delivered via Zoom.  (Subjects may change as needed by group)

Session #1 – Introduction – Taking stock of where we are at. 

This is an opportunity to learn about one another’s experience concept and hear a bit more about the developmental approach we will be following with Lori McCarthy, Cod Sounds.

Session #2 – Crafting your Guiding Principles. 

What is your philosophy, purpose and reason for operation?   By defining these key components, you will better focus your time, energy and passion towards the art of creating a great visitor experience.

Session #3 Crafting your Story. 

At the heart of any great experience is the story.   This will flow naturally once you have identified the why of your business.  In this session we will begin to construct while deconstructing an actual culinary experience.

Session #4 – Foraging and Plant Identification Session.

At the heart of this session is providing participants with some technical knowledge on how to use these types of skills within your new or enhanced experience.

Session #5 – Putting it together.

The time has come to start constructing the experience – in this session we will work collaboratively to build out an experience.

Session #6 – Sharing.

This session is about revisiting where we started as businesses and where the ideas have gotten to as we now begin the hard work of making the idea a reality.  Participants will present their expanded outlines for experiences.  Discussion of Next Steps and additional support as needed.

Who is this program for?

This program is directed at businesses with an advanced level of knowledge around either culinary or adventure tourism.  Businesses will be asked to submit an outline of their experience as part of the application process.   Typically, this program would be of interest to those in adventure tourism or smaller scale food/culinary experiences.  You must have access to a good internet connection for the zoom sessions.

Lori McCarthy is passionate about what she does!   The owner and operator of one the most talked about and awarded culinary businesses in Canada, she has been profiled widely on CNN Travel, National Geographic, National Post and Canadian Geographic Travel to name a few.  Her passion for the land is matched only by her passion for food culture. Deeply rooted in NL culture, the skilled chef and outdoorswoman is guided by a sense of responsibility to place. The ethics of conservation and sustainability inform her every move, and she is as serious about protecting the local culture, resources, and food ways of communities all over Atlantic Canada!

Joining Lori will be a wide host of local support agents from GMIST and the local community to share their knowledge and insights.

Cost

The cost for this program is $500 per person to attend.  Participants (from Atlantic Canada) accepted to the program may be eligible for a scholarship of $425 to offset tuition costs.

Please note that we will only be taking 12 Atlantic Canada business participants for this program – please pay particular attention to the level of information you can provide us within the above application form as we will use the information you provide around your business concept for selection.  This is a competitive process and we will respond to all applicants on or before October 1st regarding whether they have been accepted for the program.  Please note we may follow up with applicants asking for further information.
